Mexican Spinach Dip
2 Tbsp oil
1 medium onion. chopped
1 12-oz jar of salsa (medium)
1 10 oz pkg frozen chopped spinach, thawed and squeezed dry
2 c. grated Monterey jack cheese
8 oz cream cheese cut into ½ inch cubes
1 c. half and half
1 c. sliced black olives
1 Tbsp red wine vinegar
Saute onions in oil, add salsa. Cook until liquids are reduced somewhat.
Add remaining ingredients and mix well.
Place in shallow baking dish and cook at 400 degrees until bubbly.
Serve with chips, pita wedges, crackers, whatever you like.

It’s actually pretty decent here today. Cool enough to go for a walk this morning and run up all the steep hills (I know, it’s weird) without getting too steamy …and not so cold that my hands were freezing.
I do wish the real spring weather would get here though.
Cool to hear about the chickens… that’s a sure sign the days are longer and spring is almost here. Wish we could have chickens too, but not feasible in our neighborhood, smack in the middle of an old near-downtown neighborhood such as ours. I could just imagine the horror of the neighbors if we had them squawking around out there! LOL… but I can envy you, can’t I? Are they Arucanas by any chance?
My neighborhood sounds a lot like yours, plus I get all the fresh eggs I need from the client and don’t have to muck out the coop…NASTY.
I need to get some pictures of the project this spring, it was just finished last fall…new house, barn, coop, greenhouse and loafing shed…it was a fun one, and very energy/green oriented.
That so reminds me of a passage from the sex manual I read today at Books-a-Million by Tim LaHaye (the Left Behind freak) and his wife. Creeeeeeeeeeepeeeeee!

You just reminded me of a hilarious sex book I read back in the 80’s… Sex Tips For Girls by Cynthia Heimel who used to write for The Village Voice… it contains such advice as: “Never point to your partner’s genitals and burst out laughing.” That’s the only one I remember, but if you ever see, take a look…good for lotsa laughs!
I did flip someone off at the peace rally. … The CP sisters told me NOT to. They were so sweet about it too. So when they were doing something else, I walked over to the crapbastard and flipped him off.
He was holding up a sign on the outskirts that said “Stop the Democrats war on innocent unborn children”
I smiled when I did it so – it was a peaceful bird.
I told my sisters and they said OH NOOOO but alot of them smiled 🙂

for my money, that show was Phil Lesh’s finest. I have never heard bass like that anywhere. I always hoped he would bust out and start playing like he did that night at some show I was at, but he never came close to a repeat performance.

I found a box of my old CDs and loaded them into iTunes today…that Janis Ian album is loaded with these angsty, angry, “I don’t fit in anywhere and I’m pissed about that but I’ll act like I don’t care” songs that I used to listen to incessantly about 20 years ago. Can you tell how long I’ve been depressed. 🙂
Every time Janis Ian plays a music festival that I’m at, I leave early to avoid the depression that would surely follow from listening to her entire set. 🙂
It sure made her the perfect one to listen to when you’re clinically depressed! Because that’s what you do. Your life might be pretty damn good, but all you can do is see the little things that are wrong and blow them all out of proportion! I think her albums should come with a warning label.

The government today announced that it is changing its emblem from an Eagle to a CONDOM because it more accurately reflects the government’s political stance. A condom allows for inflation, halts production, destroys the next generation, protects a bunch of pricks, and gives you a sense of security while you’re actually being screwed.
