I was watching the Mc.Laughlin group this morning on my local PBS station, and the predictions segment at the end of the show came on, and in it, Newsweek columnist Eleanor Clift had something very wise to say, but it will piss off all you Joe Lieberman haters out there.
Clift said, “Other than favoring the war, Joe Lieberman will be a very good Democrat”. Her comments suprised me since anyone on the liberal websites, including this one, hates Lieberman with a passion.
My only question for all you idiots out there, if Clift can say good things about Lieberman, why can’t you?? You can’t say anything good about Lieberman because your utter hatred for the man clouds your judgment.
So come on Boo-Man, PSI fighter, Cabin Girl or anyone else out there. Prove to me that you have opens minds. I know I’m just waisting my time, since none of you disgusting people has anything good to say about people who may disagree with you. For people who are supposedly progressive in your thinking, you certainly act like the Republicans when it comes to Lieberman.
But I had the last laugh when Neddie the “racist” Lamont was beaten in the general election. Lieberman until 2012!!!! Choke on that!!!

As timing would have it, I made this very same recipe for brunch on Saturday.
but…but…you left out the topping of grated cheese. (The easy to use bags of “Mexican blend” grated cheese work quite well with this recipe)

World’s Best Pecan Pie
1 really good unbaked pie crust in 9″ glass pie plate
2 large eggs
1 cup white sugar
1 cup white (clear) Karo syrup
1 stick butter or margarine
1/2 tsp. vanilla
1 cup or more pecan halves
Beat eggs well. Melt butter or margarine carefully without burning it, set aside to cool just a bit. Mix sugar and syrup together thoroughly, add eggs and stir until completely mixed. Add vanilla and mix well. Arrange pecan halves one layer deep on bottom and sides of pie crust. Pour filling over pecans, and wait a bit until pecans rise to surface. If some pecans do not rise, fill in with more pecans, being sure to dip them below the surface so they are covered with the filling even as they sit on top of the pie. Bake at 300 degrees for a very long time – usually an hour or more.
At about an hour, check with a wooden spoon, to see if the filling bounces when you press on it lightly. When the filling no longer bounces, remove the pie. (Or if the edges appear to be burning, remove the pie!) If your oven runs hot, as some newer electric models do, bake at 275 degrees.
Cool only as long as you want too. Delicious hot with ice cream (it may be runny); or warm; cool; or stone cold, anytime! Double the recipe, you will need more than one.
SUNCHOKE SALAD
2 C. (480 ml) coarsely shredded Jerusalem artichokes (sunchokes)
1/2 C. (118 ml) raw pecans, coarsely chopped
1/4 of a red bell pepper, finely diced
Mayonnaise
Salt and pepper to taste
6 to 8 slices whole grain bread
12 to 16 large basil leaves
3 tomatoes, sliced
3 to 4 butter lettuce leaves (optional)
Combine sunchokes, pecans, and red bell pepper with enough mayonnaise to moisten and hold mixture together. Season as desired.
To serve, spread mayonnaise over bread slices. Divide sunchoke mixture and spread over half the bread slices. Top with 4 basil leaves, tomato slices, and lettuce, if desired. Cover with top bread slice and cut in half. Makes 3 to 4 sandwiches. Serve with fruit for a good light meal.
