I’m totally craving this today:

Greek-style Scampi

1 teaspoon olive oil
5 garlic cloves, minced
½ c chopped fresh parsley, divided
2 (28-ounce) cans diced tomatoes, well drained
1 ½ pounds large shrimp, peeled and deveined
1 cup crumbled feta cheese
2 tablespoons fresh lemon juice
¼ teaspoon black pepper
Cooked rice (or spaghetti)

  1.  Preheat oven to 400 degrees
  2.  Heat Oil in large Dutch oven over medium heat.  Add garlic, sauté 30 seconds.  Add ¼ cup parsley and the tomatoes.  Reduce heat, and simmer for 10 minutes.  Add shrimp, cook 5 minutes.
  3.  Pour mixture in 13×9 baking dish, sprinkle with cheese.  Bake at 400 for 10 minutes.
  4.  Sprinkle with remaining parsley, lemon juice, and pepper after removing from oven.  Serve with rice or pasta.

And maybe with a glass of white wine from beautiful New Zealand?
